Oaty Cottage Cheese Loaf
After twelve years of bread-free living, I've finally found something that hits the same spot without triggering the same health issues.
A perfect accompaniment for the soup recipe I shared earlier this month, this protein rich ‘bread’ is quick and easy to make, and keeps in the fridge for a couple of weeks. I’ve tried so many GF breads since discovering my gluten sensitivity and this is the only one I’ve continued to make.
To call it bread is a bit of a misnomer: it’s packed with healthy ingredients, high in protein and full of fibre and gluten free, so it will add to rather than detract from the nutrient density of your meal choices. It also lends itself to a whole raft of variations which I’ve shared below.
